Ingrediants:

1cup of flour (maida works best).
Salt to taste
1 cup of water
cooking oil

Directions:

Mix the flour and water into a thin batter and add salt to taste. let it stand for 10 - 15 minutes.
Starting heating your tabakhey/ flat griddle on low while you wait. If your tabakhay or griddle is non stick slightly oil to prevent sticking (do not add a lot of cooking oil at this point or it will splatter when your pour your batter.

Pour the batter onto the tabakhay like you would for pancakes and gently spread with your finger but make sure you dont burn them (fingers).

You will see the top side bubble and the underside cook into, making sure that it is strong enough to turn, gently edge your spatula under it and turn over. you can now add as much cooking oil as you like. Just remember that it will soak up the oil.

Fry on both sides till it is golden brown.

You can eat it with a cup of tea or treat yourself to some fried or scrambled eggs too.
